I love the 4th of July, it makes me feel so grateful to live in this amazing country and it always means friends, playing outside, fun drinks, DELICIOSO food and lots of fireworks.
I decided to give this 4th a Latin twist on American classics.

Food Confessions: Coming Clean... the fat and the skinny!

I thought long and hard before ever writing about this, but eventually, I came to the conclusion that I wanted to share my experience. Working in the food industry, I have always wanted to highlight the positive side of food, the side we all enjoy. But I have always refused to not be true to myself, nor my public. Besides being a professional eater and cook, as I always say because I am not a trained chef and never have sold myself that way, I actually am a regular person who is food obsessed and absolutely look forward to my next meal like nothing else.
I will never forget my first time touring HSN, I could not believe my eyes and although I had been instructed and advised about what to expect of my visit and the process, nothing compares to the physical experience.
It is like a university campus, with many state of the art studios that work 24 hour live TV and a few football-sized fields of operators answering calls.
The screening and security to get in there is possibly better than TSA.
I have always been enchanted by the different mediums of art, from the visual arts to music, poetry, architecture, design, film, food, dance and photography, and what they evoke. I love the amount of feelings, thoughts and ideas that can be aroused by simply living art.
And so, one day, I walked into a gallery exhibit my friend Nancy Kipnis invited me to and, as I approached this Palenquera Lady, it so took me back to my childhood. But, as I stood there in amazement, I was looking at her in such a modern way, she almost seemed surreal!
My first NASCAR event…almost.
I’ve been a member of the Mars family since I joined Bright Ideas.com. I share my entertaining ideas and exclusive recipes using the brand’s products. Needless to say, I was very excited when I was approached to cook for the M&M Mars racing team at a big NASCAR weekend in Richmond, VA. Mars asked me to create a menu to serve the team before their races. Then, mingle with the press and, of course, experience the pits and all the behind the scene excitement. It was an offer I could not refuse – first, one of NASCAR’s best, Kyle Bush, is at the helm of car #18 and second, I am a speed freak!
EUROPEAN FOOD, ART, FUN AND INSPIRATION
Nothing inspires me and invigorates me more than a good trip. It is always a great source of inspiration for me, which fills me not only with a wonderful experience but also with great ideas and it feels as if it warms my soul. But also, it makes me run home and enter my lab of creation, for most called, the kitchen!
Ever since my passion for food developed into a career, I posted goals for myself on my mirror at home so that I could stay focused. Once a goal is achieved, I cross it off, but don't erase it so I can remind myself what I have accomplished - this gets me pumped up and motivated! Everyday I work harder towards the rest of the goals I have listed.
One of the many items on that list? Oprah of course! I'm so happy to say that as of Friday, May 9th, I can officially cross that off as I make my first appearance ever on her show in a sandwich showdown!

Ceviche is one of the most classic dishes on any South American menu. Originally from Peru and Ecuador, they are now found anywhere you find fresh seafood and people who really want to enjoy it!
Very simply, ceviche is seafood "cooked" in lime juice and then seasoned with red onion, salt, pepper and sometimes oregano. Others include red or green peppers, Tabasco or tomatoes. There are as many recipes for ceviche as there are chefs, and you'll very quickly come up with your own individual favorite. The only constant is that it be bright, colorful and delicioso!

I just got back from the first Puerto Rico Food & Wine Festival, which was absolutely amazing and an incredible success.
The Island is called La Isla Del Encanto (the enchanted island) and I could not agree more
I was part of the event together with Chef Cat Cora from Iron Chef, Michele Burnstein from “Michi’s” ,George Duran from “Ham on the street” and “The secret life of” and local Chefs Wilo Benet from “Pikayo” and “Paya” and Enrique Pineiro from Bokaito and Telemundo’s “Operacion Chef”.
